One of the most common questions we receive at our Sale shop is why raw honey turns cloudy, thickens, or sets firm over time. Many people accustomed to commercial supermarket honey assume that crystallisation indicates spoilage. In truth, crystallisation is the ultimate biological hallmark of genuine, unpasteurised honey.

Raw honey is a naturally supersaturated solution primarily composed of two simple sugars: glucose and fructose. The precise ratio depends on the floral nectar gathered by our bees. Glucose is less soluble in water than fructose; as it separates from the water, it forms tiny crystals. In raw honey, natural pollen grains, propolis flecks, and microscopic wax particles serve as natural seeds around which glucose crystals anchor and multiply.

Mass-market blended honeys rarely set because they are subjected to high-temperature pasteurisation and micro-filtration. This aggressive processing melts every microscopic seed crystal and strips out beneficial pollen grains to extend supermarket shelf life, permanently altering the honey's natural enzyme structure.

If you prefer your raw honey in a liquid state, gently place the glass jar into a warm water bath maintained below 40 degrees Celsius and stir slowly. Never microwave raw honey, as direct intense heat degrades the fragile natural enzymes.
